Nutty Biscotti

Nutty Biscotti it is a real dessert nice for christmas vacation holiday. Great taste good try this new recipe

Ingredients 
1¾ cups all-purpose flour
¾ teaspoon baking soda
¼ teaspoon salt
½ cup vegan butter substitute,
slightly softened but not at
room temperature
¾ cup granulated sugar
2 tablespoons soymilk
1½ teaspoons white vinegar
1 teaspoon vanilla extract
1 teaspoon almond or
anise extract or additional
vanilla extract
1 teaspoon grated lemon peel
¾ cup finely chopped
unsalted nuts

GARNISHES:
1 cup nondairy chocolate chips
Finely chopped nuts

Method 
To make the biscotti, preheat the oven to 325 degrees F and oil 3 baking sheets. If you are not using insulated baking sheets, line the baking sheets with parchment paper and spray it with canola oil. Combine the flour, baking soda, and salt in a bowl. In a separate large bowl, combine the vegan butter substitute and sugar and beat with a wooden spoon until smooth. Beat in the soymilk, vinegar, extracts, and lemon peel.

Add the flour mixture and stir to combine. Stir in the nuts. Knead the dough with your hands so that all the flour is incorporated. If the dough feels sticky, add another tablespoon of flour. If the dough is too dry, add a teaspoon or two of soymilk. On a floured surface, form the dough into 2 domed logs, 3 to 4 inches wide and about 2 inches high.

Place on 1 of the prepared baking sheets. Bake for about 30 minutes, or until the logs begin to turn light golden brown. Remove from the oven and let cool a few minutes on
the baking sheet.

Lower the oven temperature to 275 degrees F. Transfer the logs carefully to a cutting board and cut them with a serrated knife into 1-inch-thick slices (about 12 slices per log). Place the slices cut-side down on the prepared baking sheets and bake for about 12 minutes on each side, until light golden brown. Cool on racks.

Tips 
To make the optional garnish, melt the chocolate chips in a double boiler over gently simmering water.

Alternatively, place them in a microwave-safe bowl and microwave at medium power for 1 minute. Stir. Microwave for 25 seconds longer and stir until smooth. If necessary, microwave for an additional 25 seconds.

Dip one end of each biscotti into the melted chocolate and then into the chopped nuts, if desired. Place the biscotti on parchment paper to allow the garnish to harden. Store in a sealed container.
