Method
Combine the flour and baking powder in a large bowl. In a separate large bowl, combine the sugar, vegan butter substitute, peppermint extract, soy cream cheese, and green tea powder and beat with an electric mixer until fluffy.
Add the flour mixture and stir with a wooden spoon to combine.
Gather the dough into a ball, cover with plastic wrap, and refrigerate for 2 to 12 hours. Vanilla Green Tea Stars: Replace the peppermint extract with 1 tablespoon of vanilla extract.

Preheat the oven to 325 degrees F and oil 5 baking sheets. Roll out the dough on a floured surface with a floured rolling pin to about ¼ inch thick.
Cut 2-inch stars or other shapes with cookie cutters and arrange on the prepared baking sheets 2 inches apart. Sprinkle with edible glitter, if desired.
