Mango lime pudding is a satisfying version of the classic dessert. You can touch this to your heart
Ingredients
2 cups fresh or thawed frozen
mango chunks
1 cup soymilk cup granulated sugar
¼ cup lime juice
3 tablespoons agar powder
Method
Combine the mango, soymilk, sugar, lime juice, and agar powder in a food processor or blender and process until smooth.
Transfer to a medium saucepan and cook on medium heat, stirring often, until it reaches a boil, about 5 minutes.
Remove from the heat and mix until completely smooth and there are no lumps.
Pour evenly into six 6-ounce ramekins. Cool, cover tightly with plastic wrap, and refrigerate for 4 to 8 hours before serving.
Store leftover pudding tightly covered in the refrigerator.
Tips
A small amount of agar powder is used in the recipe.
Agar is a sea vegetable with natural gelling properties. It does not make the pudding firm (like animal-based gelatin would), but it helps hold the pudding together and gives it body.
