Ingredients

1 (6-ounce) package orange gelatin

1 (3-ounce) package lemon gelatin

3 cups boiling water

1 large red apple

2 tablespoons lemon or orange juice

¼ cup blueberries

Mandarin oranges and blueberries, optional

Method

1. In a deep, 7-inch metal bowl, combine gelatins with boiling water. Stir until gelatin dissolves completely.

2. Refrigerate 1 to 2 hours or until partially set.

3. Meanwhile, place the apple on a cutting board in an upright position and cut into whole rounds, about 1/8 inch thick each.

4. Cut each slice into a star shape. Cut scraps into crescent shapes to resemble moons.

5. Place apple pieces in a bowl and spoon juice over to prevent them from discoloring. Cover with plastic wrap and refrigerate until needed.

6. When gelatin is partially set, gently press apple pieces and blueberries into the gelatin in a random fashion. Cover with plastic wrap and refrigerate until firm, 3 to 4 hours, or up to 48 hours.

7.To serve, place bowl n a pan of hot water to loosen the gelatin from sides. (If gelatin sticks, first loosen with a small, offset spatula to prevent the mold from breaking.) 

8.Invert onto a serving platter. Arrange oranges and blueberries around outer edge. Cut into wedges. Makes 8 servings
