Gingerbread guys

Ingredients 
GINGERBREAD COOKIES2½ cups all-purpose flour
1 teaspoon baking powder
½ cup vegan butter substitute,
slightly softened but not at
room temperature⅓ cup blackstrap or other
dark molasses
½ cup maple syrup
¼ cup granulated sugar
1½ teaspoons ground ginger
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg

FROSTING
½ cup powdered sugar, sifted
4 teaspoons soymilk

Method
To make the cookies, combine the flour and baking powder in a large bowl. Combine the vegan butter substitute, molasses, maple syrup, and sugar in a separate large bowl and beat with an electric mixer until fluffy.

Beat in the ginger, vanilla extract, cinnamon, and nutmeg. Add the flour mixture and stir with a wooden spoon until combined. Gather the dough into a ball, cover with plastic wrap, and refrigerate for 2 to 12 hours.

Preheat the oven to 325 degrees F and oil 5 baking sheets.

Roll out the dough on a floured surface with a floured rolling pin to about ¼ inch thick. If necessary, sprinkle additional flour directly on the dough for easier rolling. Cut with 3-inch cookie cutters and arrange on the prepared baking sheets about 2 inches apart.

Bake for about 15 minutes, until the cookies are set and slightly puffed. Let the cookies cool on the baking sheets for 3 minutes, then transfer them to racks to cool completely.

To make the frosting, combine the sugar with the soymilk in a small bowl and stir until smooth. Add more soymilk, if necessary, to reach the desired consistency.

Pipe designs onto the cooled cookies using a pastry bag or a zipper-lock plastic bag with one of the corners cut off diagonally.

During the holidays, I love giving these hearty cookies as gifts wrapped in beautiful paper. They are wholesome, even with the addition of chocolate.
