Ingredients 
CARROT CAKE COOKIES
1½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup vegan butter substitute,
slightly softened but not at
room temperature
½ cup brown sugar
½ cup granulated sugar
3 tablespoons soymilk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground ginger
1 cup finely grated carrots (obout 2 carrots)
½ cup walnuts, finely chopped (optional)
½ cup raisins, chopped (optional)

MAPLE CREAM CHEESE FROSTING
½ cup powdered sugar
½ cup soy cream cheese
¼ cup vegan butter substitute,
at room temperature
¼ cup maple syrup
1 teaspoon vanilla extract

Method 
To make the cookies, preheat the oven to 350 degrees F and oil 3 baking sheets. Combine the flour, baking powder, baking soda, and salt in a bowl.

In a separate large bowl, combine the vegan butter substitute, brown sugar, and granulated sugar and beat with a wooden spoon until creamy. Beat in the soymilk, vanilla extract, cinnamon, nutmeg, and ginger.

Add the flour mixture and stir until just combined. Stir in the carrots and optional walnuts and
raisins.

Drop the dough by 1½ tablespoons per cookie onto the prepared baking sheets about 2 inches apart. Bake for about 18 minutes, until lightly browned and springy to the touch. Cool on the baking sheets for 1 minute, then transfer to racks to cool completely.

To make the frosting, combine all the ingredients in a food processor or blender and process until smooth. Drizzle over the cooled cookies. Store in a
sealed container in the refrigerator.

Carrot Cake Sandwich Cookies: Prepare the Maple-Cream Cheese Frosting as directed, increasing the powdered sugar to 1 cup and the soy cr eam cheese to ¾ cup.

Cover and chill in the refrigerator for at least 1 hour. Spread a small amount of the chilled frosting between two cooled Carrot Cake Cookies to form a sandwich.

Assemble the remaining cookies and frosting in the same fashion.
