Tilapia Fillets with Sweet Pepper

Prep time: 10 minutes | Cook time: 3 minutes | Serves 2

½ lemon, sliced
2 (6-ounce / 170-g) tilapia fillets, skin on
2 teaspoons olive oil
Sea salt and white pepper, to taste
1 tablespoon fresh parsley, chopped
1 tablespoon fresh tarragon, chopped
½ red onion, sliced into rings
1 sweet pepper, julienned
2 tablespoons dry white wine

1. Place the lemon slices, 1 cup of water, and a metal trivet in the
bottom of the inner pot.

2. Place 4 large sheets of heavy-duty foil on a flat surface. Divide the
ingredients between the sheets of foil.

3. Bring the ends of the foil together; fold in the sides to seal. Place
the fish packets on the trivet.

4. Secure the lid. Choose the Steam mode and cook for 3 minutes at Low pressure. Once cooking is complete, use a quick pressure release; carefully remove the lid. Bon appétit!
