Pea and Trout Packets

Prep time: 10 minutes | Cook time: 3 minutes | Serves 2

1 tablespoon olive oil
2 (7-ounce / 198-g) rainbow trout fillets
1 tablespoon fresh chives, chopped
1 tablespoon fresh parsley, chopped
Sea salt and white pepper, to taste
¼ pound (113 g) sugar snap peas, trimmed
1 tomatillo, sliced
1 garlic clove, minced

1. Place 1 cup of water and a metal rack in your Instant Pot.

2. Place all ingredients in a large sheet of foil. Fold up the sides of the
foil to make a bowl-like shape. Lower the fish packet onto the rack.

3. Secure the lid. Choose the Steam mode and cook for 3 minutes at Low pressure. Once cooking is complete, use a quick pressure release; carefully remove the lid. Bon appétit!
