How to make Split Pea Soup
Prep time: 15 minutes | Cook time: 75 minutes| Serves 4
1 tablespoon extra-virgin olive oil
2 large carrots, chopped
1 medium onion, diced
2 garlic cloves, minced
4 cups chicken broth
2 cups water
Salt
Freshly ground black pepper
2 dried bay leaves
1 (16-ounce) bag green split peas

1 (16-ounce) bag green split peas
1.In a large stock pot over medium
heat, heat the oil.
2.Add the carrot, onion, and garlic.
Sauté until soft, 5 to 7 minutes.
3.Add the broth, water, salt and
pepper to taste, bay leaves, and split peas. Stir well, and bring to a boil.
4.Reduce to a simmer, cover, and let
cook for 1 hour, or until the peas are soft.
5.Remove the bay leaves, and serve
immediately.
