Peanut Butter and Jelly Coins

Prep time: 10 minutes | Cook time: 2 minutes | Makes 8 coins

4 tablespoons dark chocolate chips or no-sugar-added chocolate
2 teaspoons peanut butter
8 raspberries

1. In a microwave-safe bowl, microwave the chocolate chips on high
for 60 seconds, then remove and stir. Microwave again for 30 to 45
seconds, until the chocolate is fully melted.

2. On a piece of parchment paper, evenly drop the melted chocolate in small circular shapes, about 1 inch in diameter.

3. Top each with ¼ teaspoon peanut butter and freeze for at least 10 minutes or until the chocolate is firm and can be easily removed by gently peeling back the paper.

4. Top each chocolate coin with a single fresh raspberry and serve
immediately.
