Peachy Greek Yogurt Panna Cotta

Prep Time: 10 minutes |Cook Time: 10 minutes and 2-8 hours to
chill |Serves: 4

½ cup nonfat milk
1½ tablespoons honey
1 tablespoon unflavored powdered gelatin
1½ cups nonfat plain Greek yogurt
½ teaspoon vanilla extract (optional)
½ cup canned no-sugar-added sliced peaches, drained

1. In a small saucepan over low heat, heat the milk for 2 to 4 minutes
until lukewarm. Add honey and gelatin. Cook 3 to 5 minutes, stirring
until honey and gelatin are dissolved. (Do not bring to a boil.) Remove
from heat.

2. In a small bowl, whisk the yogurt until smooth. Add the warm
gelatin mixture and vanilla (if using). Whisk well to combine. Pour into
4 small jars, glasses or ramekins. Refrigerate for at least 2 hours or
overnight for best results.

3. Before serving, place canned peaches in a blender or food
processor and puree until smooth.

4. Top each panna cotta with 2 tablespoons of peach puree and enjoy.
