How to make Parmesan-Crusted Scallops and Greens

1 pound raw jumbo sea scallops
¼ cup cornstarch
1 large egg
½ cup grated Parmesan cheese
½ teaspoon dried or chopped fresh parsley
2 tablespoons extra-virgin olive oil
2 cups baby spinach leaves

1.Blot
the scallops dry with a paper towel. Leave a bit of moisture on the
scallops so the cornstarch will

bowl. Combine the Parmesan cheese and

a medium skillet, heat the oil over medium heat.

Sprinkle with salt and pepper to taste.

the scallops over the spinach.
