Clam and Bacon Chowder

Prep Time: 10 minutes |Cook Time: 10 minutes |Serves: 2

2 strips bacon, chopped
½ onion, chopped
1 carrot, diced
1 stalk celery, diced
1 clove garlic, minced
½ tablespoon Creole seasoning
Sea salt and ground black pepper to taste
1 cup seafood stock
1 ripe tomato, puréed
1 tablespoon tomato paste
1 bay leaf
½ pound (227 g) clams, chopped
1 tablespoon flaxseed meal

1. Press the Sauté button to preheat your Instant Pot. Now, cook the
bacon until crispy; crumble the bacon and set aside.

2. Now, sauté the onion, carrot, celery and garlic in the bacon fat.

3. Add the remaining ingredients, except the chopped clams, to the
inner pot.

4. Secure the lid. Choose manual mode and cook for 4 minutes at
high pressure. Once cooking is complete, use a quick pressure release;
carefully remove the lid.

5. Stir in the chopped clams and flaxseed meal.

6. Press the Sauté button and simmer for 2 to 3 more minutes or until everything is heated through.

7. Serve in individual bowls topped with the reserved bacon. Bon
appétit!
