How to make ChocolatePecan Squares

1 (14.5 oz) can black beans, drained and rinsed
3 large eggs
3 tbsp canola oil
¼ cup unsweetened cocoa powder, plus extra for dusting
1 tsp vanilla extract
⅓ cup granulated sugar
1 tsp instant coffee (optional)
½ cup dark chocolate chips
½ cup pecan nuts, chopped

1. Heat the oven to 350°F gas mark 4. Coat a
square cake pan with Cooking spray.
2. In a food processor, add the rinsed black
beans, large eggs, canola oil, unsweetened cocoa powder, vanilla extract, granulated
sugar, and coffee (if using), process until smooth and
lump-free.
3. Pour the mixture into the cake pan and
sprinkle the dark chocolate chips and chopped pecan nuts on top.
4. Bake for 30 minutes until the top is dry, and
the edges start to pull away from the sides of the pan.
5. Dust the top with unsweetened cocoa powder and
cut into 16
