The Filipino Style Guisadong Pusit (Sautéed Calamari) Serves 4

2 lbs. medium-sized squids, cleaned
1 tablespoon vegetable oil
2 cloves garlic, minced
1 medium-sized onion, finely minced
1 medium-sized tomato, finely sliced
1 tablespoon vinegar
2 tablespoons soy sauce
2 stalks green onions, sliced
salt and pepper to taste
Method:
In a non-stick skillet over medium heat, sauté garlic in oil until lightly browned. Add onion, stir for 1 minute. Add tomato, vinegar and soy sauce, and simmer for 5 minutes.
Add squids and continue cooking for another 3-5 minutes or until squids are just cooked. Correct seasonings to taste.
Transfer dish to a serving platter, garnish with sliced green onions on top and serve immediately.
