The Filipino Ginataang Alimango (Crabs in Coconut Milk) Serves 4

2 large crabs
1 clove garlic, minced
1 teaspoon ginger, finely sliced
1 teaspoon vegetable oil
2/3 cup coconut milk
1 hot chili pepper
salt and pepper to taste
Method:
Steam crabs until cooked. Set aside and let cool. When cooled, remove crab shells and cut the part with the crab meat in quarters.
In a skillet over medium heat, sauté garlic and ginger in oil until lightly browned. Add coconut milk, hot chili pepper and salt and pepper to taste. Let boil, then add crab pieces and simmer for 5-7 minutes.
Serve immediately with rice.
