The Ham and wild rice soup recipe prep time: 15 minutes start to fi nish: 7 hours 30 minutes 6 servings (11⁄2 cups each)
Ingredients:
2 cups diced cooked ham
1 cup julienne-cut carrots (from 10-oz bag)
3⁄4 cup uncooked wild rice
1 medium onion, chopped (1⁄2 cup)
1 3⁄4 cups chicken broth
1 can (10 3⁄4 oz) reducedsodium cream of celery soup
1⁄4 teaspoon pepper
3 cups water
1 cup half-and-half
1⁄4 cup sliced almonds
2 tablespoons dry sherry, if desired
1⁄4 cup chopped fresh parsley
Method:
1 In 3- to 4-quart slow cooker, mix all ingredients except half-andhalf, almonds, sherry and parsley.
2 Cover; cook on Low heat setting 7 to 8 hours.
3 Stir in remaining ingredients. Increase heat setting to High; cover and cook 10 to 15 minutes longer or until hot.
healthy twist:
You can reduce the fat in this recipe by using whole milk instead of the half-and-half.
