Warm Citrus Beef Salad Recipe is a tasty light meal bursting with fresh citrus flavour makes a great summer dish to share with friends and family.
Ingredients:

500 g (1 ln) rump or sirlom steak.cut into thin stips
1 onion, sliced
2 cloves garlic. crushed
1 teaspoon grated fresh ginger
1 teaspoon grated lemon rind
1 teaspoon grated orange rind
1 teaspoon, Lemon Juice
1 teaspoon orange juice
100 g (3 1/2 oz) rocket leaves
40 g (1 1/4 oz) snow pea sprout (mangetout)
1 Lemon, segmented
1 orange, segmented
Method:
Heat the wok until very hot, add 1 tablespoon of the oil and swirl it around to coat the side.
Stir-fry the beef in batches until well browned, adding more oil when necessary. Remove all the beef the wok and set aside.
Reheat the wok, add 1 tablespoon of the oil and stir-fry the onion, garlic and ginger for 3-4 minutes, or until tender.
Return the meat to the wok along with the combined lemon and orange rind and huice.
Bring to the biol, then toss the rocket through the beef mixture and cook until the rocket is just wilted.
Serve immediately on a bed of snow pea sprouts, sorrounded by the lemon and orange segments.
