Tropical Fruit Mini Pavlovas Recipe nice and pretty summer refreshing dessert. nice and elegant, Australian day
Serves: 8
Ingredients:
6 egg whites
1 1/2 cups (330g) caster sugar
300m1 thickened cream, whipped
1 medium kiwi fruit (85g), peeled, halved, sliced thinly
1 small mango (100g), peeled, sliced thinly
2 passionfruit
shaved fresh or flaked dry coconut, optional
Method:
Preheat oven to very slow.
Draw eight 85cm circles on a large sheet of baking paper. Grease an oven tray; place paper, marking-side down, on tray.
Beat egg whites in large bowl with electric mixer until soft peaks form, gradually add sugar, continue beating until sugar is dissolved (about 10 minutes).
Divide mixture evenly among circles, shape using a palate knife.
Bake in very slow oven about 30 minutes or until crisp and dry. Cool paviovas in oven with door ajar.
Just before serving, top paviovas with whipped cream, fruit and coconut, it desired.
