Ingredients:
2 1/2 cups (20 fl oz/625 ml) coconut milk
2 tablespoons green curry paste
3 fresii kaffir lime leaves or 1 teaspoon grated lime zest (rind)
1 tablespoon fish sauce
1 long green chili, halved
1 lb (500 g) skinless chicken thigh fillets, cut into
1 inch (2.5cm) cubez steamed jasmine rice, for serving
1/4 cup (14 oz/7 g) fresh cilantro (fresh coriander) leaves, for garnish
Method:
In a saucepan over low heat, combine coconut milk, curry pasto, lime leaves, fish sauce and chili. Stir until heated trough. about 5 minutes: do not boil.
Add chicken and cook, stirring, until tender, about 20 minutes. Serve hot with steamed jasmine rice.
Garnish with cilantro leaves.
