Jicama Slaw

Jicama Slaw Recipe is a root vegetable that is high in fiber and provides a mildly sweet crunch.

Ingredients
1 cup Cabbage, sliced thin
½ cup Jicama, peeled and diced
1 large Apple, cut into matchstick-sized strips
¼ cup Diced red onion
2 Tbsp. Pine nuts
1 Lime
1 Tbsp. Olive oil
1 tsp. Chopped mint
Yield 4 servings

Method:
1. Combine the cabbage, jicama, apple, onion and pine nuts in a serving bowl and mix.

2. In a separate bowl, squeeze the juice out of the lime and whisk it with the olive oil and mint to make a dressing.

3. Cover both bowls and chill for at least an hour.

4. Pour the dressing over the slaw and mix just before serving.
