Chicken Noodle Soup Recipe is a favorite comfort food, this Chicken Noodle Soup is low in fat and full of lean meat and vegetables.
Ingredients
1 Tbsp. Vegetable oil
¼ cup Chopped carrots
¼ cup Chopped celery
½ cup Chopped onion
1 tsp. Minced garlic
1 Diced tomato
10 oz. Cubed grilled chicken breast
4 cups Low-sodium vegetable broth
1 cup Dry pasta, any shape that will fit on a spoon
1 tsp. Chopped parsley
1 tsp. Chopped oregano
¼ tsp. Pepper
Method:
1. Pour the vegetable oil into a pot and warm it under medium heat.
2. Add the carrots, celery, onions, and garlic and cook them under medium heat until all the vegetables are tender enough to be pierced easily by a fork. Stir the vegetables often to avoid browning.
3. Add the vegetable broth and the chicken and bring to a simmer.
4. Allow the soup to simmer for 20 minutes. Then add the pasta and allow it to cook through as the soup continues to simmer.
5. As the pasta cooks, it will absorb some of the water. If the soup looks too thick, adjust it by adding water.
6. Add the diced tomato and let the soup cook 10 more minutes.
7. Add the parsley, oregano, and pepper and let the soup cook five more minutes.
8. Serve piping hot in bowls. Garnish with a parsley leaf.
