Soba Noodle and Vegetable Soup is a very good soup. Very flavorful and my whole family loves it. I often give extra to friends and they all love it as well. I make very little alterations to it.
Ingredients
250 g (9 oz) sobra noodles
2 dried shiitake mushrooms
2 litres (70 fl oz/8 cups) vegetable stock
120 g (4 1/4 oz) snow peas, cut into thin strips
2 garlic cloves, finely chopped
6 spring onions (scallions) cut into 5 cm (2 inch) lenghs and thinly sliced lenghways
3 cm (1 1/4 inch) piece fresh ginger, cut into matchsticks
80 ml (2 1/2 fl oz/ 1/2 cup) soy sauce
60 ml (2 fl oz/ 1/4 cup) mirin (sweet rice wine) or sake
90 (3/ 1/4 oz/1 cup) bean sprouts, trimmed
Method
1. Cook the noodles according to the packet instruction, then drain.
2. Soak the mushrooms in 125 ml (4 cl oz/ 1/2) boiling water until soft. Drain, reserving the liquid. Discard the sterms and slice the caps.
3. Combine the vegetable stock, mushrooms, reserved liquid, snow peas, carrot, garlic, spring onion and ginger in a large saucepan.
4. Bring slowly to the boil, then reduce the heat to low and simmer for 5 minutes, or until the vegetables and tender.
5. Add the soy sauce, mirin and bean sprouts. Cook for a furhter 3 minutes
6. Divide the noodles among serving bowls. Ladle the oup and vegetables over the noodles and garnish with coriander
