Ingredients
Makes 12 muffins
2/3 cup all-purpose flour
1/2 cup confectioners’ sugar
1/2 cup white sugar
1 tablespoon poppy seeds
8 egg whites
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1/2 teaspoon grated lime or
calamansi zest
Topping
1/2 teaspoon poppy seeds
Method
Preheat oven to 350°F,
Line a 12-cup muffin pan with paper baking cups. In a bowl, sift together flour, confectioners’ sugar and white sugar.
Stir in poppy seeds. Set aside, In another bowl, beat egg whites, cream of tartar and salt with electric mixer at high speed until soft peaks form.
Fold in flour mixture and lime or calamansi zest.
Spoon the baffer into prepared muffin cups and bake in preheated oven about 15 minutes or until the muffins are golden and cake tester inserted in the center comes out clean.
Transfer the pan to a wire rack and let muffins cool completely. Make the glaze. Spread the glaze evenly over the top of the cooled muffins.
Sprinkle with poppy seeds before serving.
For the glaze
1/2 cup confectioners’ sugar
1 tablespoon butter, softened
1 tablespoon fresh milk
1 teaspoon vanilla extract
In a bawl, beat sugar, butter, milk and vanilla until smooth.
