Ingredients
1/2 cup shortening
1/3 cup packed light brown sugar
1/4 cup dark molasses
1 egg white
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
½ teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon baking powder
Method
1. Beat shortening, brown sugar, molasses, egg white and vanilla in large bowl with an electric mixer at high speed until smooth,
2. Combine flour, cinnamon, baking soda, salt, ginger and baking powder in small bowl.
3. Add to shortening mixture; mix well. Cover; refrigerate about 8 hours or until firm.
