Ingredients
Nonstick cooking spray
24 giant goldfish crackers
12 pepperoni slices, halved
12 Cheddar and Monterey Jack cheese cubes, halved
(24 halves total)
24 small olive slices
24 (flat leaf) parsley leaves
Method
1. Preheat oven to 425°F,
2. Coat large baking sheet with cooking spray.
3. Place crackers on the baking sheet and arrange two pepperoni slices on the tail end.
4. Place a cheese half in the center of each fish. Repeat with remaining fish.
5. Bake 3 minutes, or until cheese has melted. Remove from oven and immediately top with olive slice to form an eye.
6. Lift up olive slice slightly and place a parsley leaf behind ¡t to act as a fin. Gently press down on olive to adhere. Serve warm. Makes 24 crackers
Notes and Tips
Fish may be assembled up to 2 heurs in advance. Complete steps ‘I and 2, then cover with a sheet of plastic wrap or foil and refrigerate until ready to bake.
