The candied sweet potatoes recipe prep time: 20 minutes start to finish: 40 minutes 6 servings

6 medium unpeeled sweet potatoes (2 lb)
1⁄3 cup packed brown sugar
3 tablespoons butter or margarine
3 tablespoons water
1⁄2 teaspoon salt

1 In 2-quart saucepan, place sweet potatoes and enough water just to cover potatoes. Heat to boiling. Reduce heat; cover and simmer 20 to 25 minutes or until potatoes are tender when pierced with a fork.

2 Drain potatoes. When cool enough to handle, peel potatoes and cut into 1⁄2-inch slices.

3 In 10-inch skillet, heat remaining ingredients over medium heat, stirring constantly, until smooth and bubbly. Add potatoes; gently stir until glazed and hot.

Notes and Tips:
To make the sweet potatoes with only 2 grams of fat and 185 calories per serving, decrease the butter to 1 tablespoon and use a nonstick skillet.
