The slow cooker sweet potatoes recipe prep time: 15 minutes start to finish: 6 hours 15 minutes 10 servings
Ingredients:
6 medium dark-orange sweet potatoes (2 lb), peeled, cut into 1⁄2-inch cubes
1 1⁄2 cups applesauce
1⁄2 cup packed brown sugar
3 tablespoons butter or margarine, melted
1 teaspoon ground cinnamon
1⁄2 cup chopped nuts
Method:
1 In 2- to 31⁄2-quart slow cooker, place sweet potatoes. In medium bowl, mix remaining ingredients except nuts; spoon over potatoes.
2 Cover; cook on Low heat setting 6 to 8 hours.
3 Meanwhile, in ungreased heavy skillet, cook nuts over mediumlow heat 5 to 7 minutes, stirring frequently until browning begins, then stirring constantly until golden brown; set aside. Sprinkle nuts over sweet potatoes before serving.
Notes and Tips:
If you’re cooking a holiday meal, this side dish can be cooking in the slow cooker while your meat is roasting in the oven. If your home is the holiday gathering spot for family and friends, you can double or triple this recipe and cook it in a 5- to 6-quart slow cooker.
