The Filipino Okoy Recipe
1 cup tagunton (small shrimp),
trimmed but not peeled
1 cup all-purpose flour
3 cups shredded squash
1 cup water
1/4 cup chopped onions
1/4 cup diced spring onions Salt and pepper to taste Cooking oil for deep frying
In a bowl, combine tagunton, egg, flour and squash. Pour water and mix well with a wooden spoon.
Add chopped onions and spring onions. Season with salt and pepper. Continue mixing to blend well.
Shape the mixture into individual patties.
In a deep pan heat oil and gently slide the patties into pan.
Deep-fry for about 2 minutes or until crisp and brown. Drain patties on paper towels.
Serve hot with a dipping sauce of vinegar and garlic.
