Serves 6
Ingredients:
3 medium bangus, deboned (split open daing style)
salt and pepper, to taste
1/4 cup liquid seasoning
2 tablespoons calamansi juice
1 cup cooking oil, for deep-frying
4 medium tomatoes, diced
1 medium size white onion, diced
2 finger chilies, sliced
3 salted eggs, peeled and coarsely crumbled
Method:
Wash ban gus genily and pat dry wth paper towels. Place in a glass dish and season with salt and pepper.
In a bowl, combine liquid seasoning and calamansi juice.
Pour over bangus and let marinate about 1 hour, In a skillet, heat oil.
Fry bangus in hot oil about 5 minutes each side or until golden in color. l-ain on paper towels.
loosely cover with aluminum foil and keep warm. Meanwhile, in a bowl, combine torratoes, onions, chilies and eggs. Mix well.
Spoon on top of fried bangus before serving.
