Versatile Chicken Salad

Versatile Chicken Salad Recipe is can be served as a sandwich for lunch, with crackers for a snack, or on a bed of lettuce for a nutritious dinner.

Ingredients
1 cup Lowfat plain yogurt
2 tsp. Lemon juice
¼ tsp. Paprika
1 pound Diced grilled chicken
¼ cup Diced carrots
¼ cup Diced celery
¼ cup Raisins
2 Tbsp. Diced almonds

Method:
1. Mix the yogurt, lemon juice, and paprika in a small bowl.

2. In a larger mixing bowl, combine the chicken, carrots, celery, raisins, and almonds.

3. Fold the yogurt mixture into the chicken mixture.

4. Chill the chicken salad in the refrigerator for at least one hour.
