Marinated Julienned Vegetables Recipe The vinegar in the marinade contains an acid that breaks’ down the fibers in the vegetables. The softens the vegetables without cooking.
1 cup Red bell pepper, julienned
1 cup Carrots, Julienned
½ cup Red onion, julienned
1 cup Cabbage, julienned
1 Tbsp. Rice vinegar
2 tsp. Low-sodium soy sauce
2 tsp. Peanut oil
1 tsp. Chopped garlic
Yield: 4 servings, 3/4 cup each
1. Mix the julienned vegetables and put them in a sealable plastic bag.
2. Mix the vinegar, soy sauce, peanut oil and garlic and add it to the bag.
3. Seal the bag and store the vegetables in a refrigerator overnight. If possible, turn the bag over every few hours. Serve cold.
