Crunchy Canapé

Crunchy Canapé Recipe are usually small, rich, single-bite hors d’oeuvres. These pack plenty of flavor, but keep the calorie count
low.

Ingredients
1 Baguette (Long, thin loaf of bread)
2 tsp. Olive oil
1 tsp. Chopped parsley
3 Tbsp. Mayonnaise
1 tsp. Diced capers
¼ tsp. Cayenne pepper
4 oz. Sliced turkey
2 Tbsp. Dried cranberries

Method:
1. Using a bread knife, slice the baguette into half-inch slices. Use a drinking glass or small cutter to make circles out of each slice.

2. Save the crusts to make bread crumbs later. Spread the bread circles onto a baking sheet.

3. Preheat oven to 200° F. Brush the circles lightly with olive oil and sprinkle the parsley on top.

4. Bake the bread slices on the low heat, checking often to see if they’ve dried out. You want the slices to be crunchy but not burned.

5. In a small bowl, mix the mayonnaise, capers and cayenne pepper. Spread the mixture lightly over each slice of bread.

6. Cut the turkey into small square pieces that will fit inside the edges of the bread circles and stack them on top of the slices.

7. Garnish with a single dried cranberry on top.

8. Serve immediately or cover and put in refrigerator to serve later.
