Vanilla Bean Flan

How to make VanillaBean Flan

Cook time: 5 minutes | Serves: 1

2 vanilla pods
½ cup light unsweetened almond milk
1 tsp stevia sweetener
1 tbsp (1 packet) plain gelatin powder

1. Cut the vanilla pod in half lengthwise, making sure not to cut all
the way, and butterfly it open. Using a dinner knife, scrape the beans
from the pod. Set aside.

2. In a small stockpot, heat the almond milk for 1 to 2 minutes, then
add the vanilla beans, the cut vanilla pod, and stevia sweetener, stir to
dissolve, and infuse. Discard the vanilla pods.

3. Sprinkle in the plain gelatin while stirring constantly to ensure the
gelatin dissolves completely. Remove from the heat.

4. Add the milk mixture to a blender and blend for 30 seconds, until
frothy. Pour into a small dessert bowl.

5. Allow the dessert to set for an hour in the refrigerator to firm.

6. Serve and enjoy.
