Egg White Scramble

How to make EggWhite Scramble

Prep time: 5 minutes | Cook time: 5 minutes | Serves1

1/4 cup non-fat cottage cheese
2 egg whites (lightly beaten)
Nonstick cooking spray
Pinch dried herbs (such as oregano or basil)
Salt and freshly ground black pepper to taste

1. In a medium bowl, mash the cottage cheese with a fork to break
up the curds. Add the egg whites and whisk until smooth.

2. Spray a small nonstick skillet with cooking spray and heat over
medium heat. Add the egg mixture, sprinkle with the herbs and stir
gently until cooked through 4 to 5 minutes.

3. Mash the cooked egg mixture with a fork to desired consistency,
season to taste with salt and pepper and serve immediately. Enjoy!
