Creamy Cauliflower Dish

Prep time: 10 minutes | Cook time: 5 minutes | Serves1

½ teaspoon pepper
4 teaspoons extra virgin olive oil
½ teaspoon garlic salt
1 teaspoon salted butter
1/3 cup low-fat buttermilk
3 cloves garlic
Large head of cauliflower

1. Break the cauliflower into small florets and transfer to a large
microwave-safe bowl, add the garlic and a quart of water.

2. Microwave for 5 minutes until the cauliflower is tender.

3. Use a garlic press and crush the garlic cloves, add to the food
processor and add to the cauliflower.

4. Add pepper, garlic salt, butter, two teaspoons of olive oil and
buttermilk.

5. Process well until creamy and smooth.

6. Drizzle the remaining olive oil over the top and enjoy.
