Cold Shrimp Soup

How to make ColdShrimp Soup

Prep time: 5 minutes | Cook time: 0 minutes | Serves 4

2 cups low-fat buttermilk
1½ teaspoons dry mustard
¼ packet artificial sweetener
½ pound (227 g) cooked shrimp, peeled and cleaned
1 small cucumber, peeled, seeded, and chopped (about ½ cup)
1 tablespoon minced fresh chives
Salt and pepper, to taste

1. In a food processor, combine all ingredients, except salt and
pepper, and purée until smooth.

2. Chill for 1 hour in refrigerator before serving. Add salt and pepper to taste.
