Coconut Fruity Ice Pops

Prep time: 10 minutes | Cook time: 0 minutes | Serves 8

2½ cups unsweetened coconut water
1¼ pounds (567 g) cubed or sliced soft fruit (such as strawberries, mango,
kiwi, or raspberries)
2 to 3 tablespoons agave nectar or your favorite sweetener

1. Place the coconut water and half of your chosen fruit in a blender,
and blend until smooth. Add the agave nectar and blend again,
adjusting the sweetness to taste (remember, sweetness diminishes
with freezing).

2. Divide the remaining fruit among popsicle molds (about 8) then top
with the puréed fruit mixture.

3. Freeze for at least 4 hours, or overnight, until solid.

4. To remove the popsicles from the molds easily, try plunging them briefly in warm water to tease them out.
