Chocolate Brownies with Almond Butter

Prep time: 5 minutes | Cook time: 25 minutes | Makes 16 brownies

Nonstick cooking spray
½ cup cocoa powder
1 tablespoon ground flaxseed
½ teaspoon ground instant coffee
¼ teaspoon baking soda
½ cup almond butter
¼ cup melted coconut oil
2 large eggs
1 teaspoon vanilla extract
½ cup agave nectar

1. Preheat the oven to 325ºF (165ºC). Coat an 8-by-8-inch glass
baking dish with the cooking spray.

2. Place the cocoa powder, flaxseed, instant coffee, baking soda,
almond butter, coconut oil, eggs, vanilla, and agave nectar in a highspeed
blender or food processor. Blend on medium-high until smooth.
Pour the batter into the baking dish.

3. Bake for 25 minutes or until a toothpick inserted in the middle
comes out clean. Let cool for 10 minutes before cutting into 16
squares.
