Chicken and Lotus Root Soup

Serves 1
3 1/2 oz. lotus roots
3 oz. skinless chicken breast
1 cup reduced-sodium chicken stock.
1 cup water
1/2 carrot, diced.

1. Combine the ingredients in a slow cooker. Set on LOW for 6-7
hours. Serve piping hot.
