Broccoli Purée

How to make Broccoli Purée

Prep Time: 30 minutes |Cook Time: 10 minutes |Serves: 6

1 pound (454 g) fresh broccoli, cut into florets
½ cup water
½ teaspoon salt, plus more to taste
1 teaspoon butter
1 teaspoon lemon juice
½ teaspoon onion powder
Freshly ground black pepper to taste

1. Combine the broccoli florets, water, and ½ teaspoon salt in a
medium saucepan and bring to a simmer. Reduce the heat, cover the
saucepan and simmer until the broccoli is tender, 5 to 10 minutes.

2. Drain the broccoli, reserving the cooking water. Add the butter,
lemon juice and onion powder, season with salt and pepper and allow
to cool.

3. Place about 1 cup broccoli florets and ¼ cup cooking water in a
food processor and pulse until smooth. Repeat with the remaining
broccoli.

4. Serve immediately.
