Shrimp Gazpacho-Style Soup

Prep time: 5 minutes | Cook time: 15 minutes| Serves 4

1 tablespoon extra-virgin olive oil
1 cup chopped yellow onion
½ cup diced bell pepper
3 cups chopped tomato
4 teaspoons freshly squeezed lemon juice
½ teaspoon salt
1½ cups cooked shrimp

1.Coat a medium skillet with the oil and heat over medium heat. Add the
onion and pepper, and cook for 5 to 7 minutes, stirring occasionally, until
the onion is slightly translucent.

2.Add the cooked onion and pepper, tomato, lemon juice, and salt to a
blender. Blend for 1 to 2 minutes on high or until mixture is smooth.

3.Pour the soup into a bowl and add the shrimp. Enjoy.
