Cheesecake Cottage Cheese

Prep time: 2 minutes, plus 30 minutes to chill| Serves 2

1 cup low-fat cottage cheese
2 tablespoons whipped cream cheese
2 teaspoons brown sugar
1 teaspoon vanilla extract

1.In a bowl, combine the cottage cheese, cream cheese, brown sugar, and vanilla extract. Mix well.

2.Serve and enjoy alone or with your favorite low-carbohydrate fruit. Best served chilled in the refrigerator for about 30 minutes before eating.
