The Walnut and White Chocolate Brownies Recipe is a slightly soft in the center, these make a tempting afternoon treat.
Ingredients:
2 tbsp unsalted butter, diced, extra for greasing
2oz (50g) good-quality dark chocolate
3 large eggs
1 tbsp honey
1 1/4 cup light brown sugar
1/2 cup all-purpose flour
1/2 tsp baking powder
pinch salt
6oz (175g) walnut pieces
scant 1oz (25g) white chocolate, chopped
Method:
1 Preheat the oven to 325°F (160°C). Lightly grease the pan, or line the base and sides with parchment paper.
2 Break the dark chocolate in pieces and put it with the butter into a heatproof bowl over a saucepan of simmering water until melted, stirring occasionally.
3 Don’t let the bowl touch the water. Remove the bowl from the pan and set aside to cool slightly.
4 Beat the eggs, honey, and sugar together, then gradually beat in the melted chocolate mixture.
5 Sift the flour, baking powder, and salt over, add the walnuts and white chocolate, and fold in the ingredients. Pour the mixture into the prepared pan.
6 Put the pan in the oven and bake for 30 minutes. Cover loosely with foil and bake for another 45 minutes. The center should be a little soft.
7 Leave to cool completely in the pan on a wire rack. When cold, turn out onto a board and cut into squares.
8 STORE The brownies will keep in an airtight container for 5 days.
