The Pusit Relleno (Stuffed Calamari) Serves 4-5
Pusit Relleno |
10-12 pieces large squids
1/2 lb. ground pork
3 stalks green onions, finely sliced
1 egg, beaten
salt and pepper to taste
I clove garlic, minced
1 tablespoon vegetable oil
I medium-sized onion, chopped
I medium-sized tomato, chopped
in bay leaf
1 tablespoon soy sauce

Stuff squid cavities with this mixture. Place in a pan in a steamer and steam covered for 10-15 minutes or until filling is cooked. Drain liquid that will accumulate in pan. Set aside.
Prepare sauce while steaming squids. In a skillet over medium heat, sauté garlic in oil until lightly browned. Add onion and stir for 1 minute.
Add tomato, bay leaf and soy sauce and cook for 3-5 minutes until tomato pieces are soft. Pour sauce on top of stuffed squids. Serve immediately.
