The Parmesan Crisps Recipe The simplest recipe imaginable use these crisps as a garnish or canapé.
For the crisps:
4oz (100g) Parmesan cheese, finely grated
For the additional ingredients (optional)
1 tbsp poppy seeds, or 1 tbsp sesame seeds,
or 1 tbsp chopped herbs, such as rosemary,
thyme, or sage
Method:
1 Preheat the oven to 400°F (200°C). Mix the cheese in a bowl with any one of the additional ingredients (if using).
2 Place the pastry cutter on a non-stick baking sheet.
3 Sprinkle 1 tablespoon of the grated cheese mixture inside the cutter, making sure to spread it out evenly. Gently remove the cutter. Repeat the process with the remaining cheese.
4 Bake them at the top of the oven for 5–7 minutes, or until the cheese has melted and started to brown slightly at the edges.
5 Leave the crisps to harden on their sheets for a couple of minutes, but transfer them to a wire rack before they cool completely, or they can be difficult to move. They are best eaten on the day they are made.
