The Apple and Cinnamon Oat Cookies Recipe Adding grated apple to the dough makes these cookies soft and chewy.
Ingredients:
7 tbsp unsalted butter, softened
1 1⁄4 cups light brown sugar
1 large egg
1 tsp pure vanilla extract
1 tbsp honey
3⁄4 cup all-purposed flour, sifted
1⁄2 tsp baking powder
1 1⁄2 cups oats
2 tsp cinnamon
1⁄4 tsp of salt
2 apples, peeled, cored, and coarsely grated
a little milk, if needed
Method:
1 Preheat the oven to 375°F (190°C). Combine the butter and sugar in a bowl and cream together with an electric hand mixer until smooth. Add the egg, vanilla extract, and honey, and beat well until smooth.
2 Stir the flour, baking soda, oats, cinnamon, and salt into the creamed mixture to combine.
3 Mix in the apple. If the mixture seems a bit too stiff, add a little milk. Take walnut-sized pieces of dough and roll them into a ball between your palms.
4 Flatten them slightly and place on 2 or 3 non-stick baking sheets, leaving space for the cookies to spread. Bake for 10–15 minutes until golden brown.
5 Leave on the sheets for a couple of minutes before transferring them to a wire rack to cool completely. STORE The cookies will keep in an airtight container for 5 days.
