The Filipino Pancit times three Recipe is not your traditional Pancit, but then Pancit is a Chinese influenced Pilipino dish that demands we create our own. You can do it up vegetarian or mix in whatever vegetables, meats and seafoods call to you.

Ingredients:
1/2 poundpork; Cut into small bite size pieces
1/2 poundchicken; cut into small bite size pieces
1/2 pounddried shrimp; hydrated in hot watr
1/2 poundshrimp, small; shelled, deveined
1/2 cupChinese Sausage; sliced into thin coins
1 largeonion; chopped
8 clovesgarlic; chopped
2 small pkgesbean thread noodles; hydrate in hot water till soft and pliable
1 small pkgCanton noodles
1 small pkgspaghetti noodle
1 cupcarrots; sliced into thin 2" strips
1/2 cupcelery; 2" diagonal slices
1 smallcabbage; cored, cut into 4, then thinly sliced
1 cupsnow peas
1/4 cupscallions; sliced diagonally
2 tablespoonssoy sauce; to taste
2 tablespoonspatis; to taste
1 cupwater
4 tablespoonsvegetable oil
Method:
Preparing the noodles:
Boil 6 cups of water in a large pot. When boiling, add the spaghetti noodles and cook till al dente. Drain, rinse and set aside. While the water for this step is coming to a boil, place the bean thread noodles in a large metal bowl with enough boiling hot water to cover the noodles and some. Let sit until soft and pliable. Nothing to do with Canton Noodles yet, just have it ready.
Preparing the other ingredients:
In a deep fry pan or large pot, saute the onions and garlic till transparent. Add the pork, chicken, dried shrimp, shrimp, and chinese sausage. Stir fry lightly until the shrimp and meat are barely cooked. Add flavorings: salt, patis, pepper, sesame oil and mix well.
Taste for flavor and adjust to your taste buds. Go for full flavor cause when you add the vegetables, it will tone it down. Add water, bring to boil and add all the vegetables, stir well but lightly so as not to break the meats down.
Simmer for about 20 minutes. Taste for flavor again and adjust if needed, once again going for full flavor as the noodles will tone it down. Now add the noodles (yes, all three!), mix well. Taste for flavor one last time and adjust as needed.
Serve up with sliced scallions sprinkled over the top, slices of boiled egg decoratively placed and slices of lemon to individually squeeze over servings. For those who like a lot of flavor, have separate bowls of patis and lemon on the side.
