Aurora's Bibingka

The Aurora's Bibingka Recipe is my ex-mother-in-law who was an excellent cook and taught me many dishes, among other things. This dish is one of my favorite. She made this a lot for me when I was pregnant with my oldest child.

Serve: 1

Ingredients:
1 1 box, 16 ozRice Flour
1 cubebutter; melted and cooled to room temperature
1.5 cupssugar
6 eggs; beaten with the sugar
2 cans, 12 oz.coconut milk
1 tablespoonzest of lemon or orange rind
1 tablespoonvanilla

Method:
Preheat the oven to 325 F.

Beat the eggs with the sugar till the sugar crystals dissolve. Add all other ingredients, plus 1/2 of the melted butter, and blend till all lumps are gone.

Coat a glass baking (9 x 12) with the remaining butter, making sure all the surface is coated.

Pour the batter into the pan and bake for 2 to 3 hours until the top is a lovely golden brown and an inserted toothpick (in the center) comes out clean.

Remove from the oven to cool. Cut into serving pieces, stacked artfully on a platter.

Optional:
Sprinkle the cake pieces with grated fresh or hydrated coconut flakes to serve.
