The chili mole recipe prep time: 15 minutes start to fi nish: 4 hours 15 minutes 6 servings (1 1⁄2 cups each)
Ingredients:
lb lean (at least 80%) ground beef
1 medium onion, chopped (1⁄2 cup)
1 package (1.25 oz) Tex-Mex chili seasoning mix
1 can (28 oz) diced tomatoes, undrained
1 can (28 oz) crushed tomatoes, undrained
1 can (15 oz) spicy chili beans, undrained
1 oz unsweetened baking chocolate, coarsely chopped
Method:
1 In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
2 Spray 4- to 5-quart slow cooker with cooking spray. In cooker, mix beef mixture and remaining ingredients.
3 Cover; cook on Low heat setting 4 to 6 hours. Stir well before serving.

Mole (pronounced “MOH-lay”) refers to a Mexican sauce that is characterized by the addition of chocolate. You can reduce calories and fat in this version just by using extra-lean ground beef.
